April Pauly developed her French cruller recipe with Ben Pauly during the pandemic, using eggs from her farm. After she moved to Vermont in 2021, the couple held their first pop-up that December on the back porch of Angkor Wat restaurant in Woodstock, then ran a weekend pop-up at Simon Pearce's Parker House in Quechee from April 2022. In October 2025 they opened Farmer and the Bell, an 82-seat bakery-cafe in a geobarn at 69 Pleasant St in Woodstock's East End, with crullers still at the heart of the menu.
