National Bakery was founded in 1925 by Louis Wisniewski in a Polish neighborhood on Milwaukee's south side; the name was chosen because 'national' meant 'for the people' in Polish. The business expanded from 1991 onward, adding suburban stores that are now in Brookfield and Greendale (2009). It celebrated its 100th anniversary in 2025.
