Leigh Ann Tona and Zach DeLong met on the Delaware food-truck circuit, where she ran I Don't Give a Fork and he ran Scission Craft Coffee. They opened Sleeping Bird Coffee on Miller Road in Wilmington in 2021 and followed it in August 2024 with Sleeping Bird Doughnuts on Concord Pike, a small-batch shop built around handcrafted brioche and cake doughnuts with a rotating menu. It sold out of all 375 doughnuts within an hour on opening day.
