Lincolnway has been operated by Kyle Hong, with his father James Hong, since roughly late 2014 (Kyle had run it 'almost three years' as of October 2017), with veteran baker Allen Hetrick making about 44 types of doughnuts daily. In fall 2017 Hong opened Hi Sushi, a sushi bar and restaurant, inside the same building, creating a donuts-by-day, sushi-by-night operation.
