Founded in 2012 in downtown Minneapolis by pastry chef Katy Gerdes, a RISD-trained fashion designer who built the baking program at Hell's Kitchen. The bakery relocated its flagship to St. Louis Park and added an MSP Airport counter; in 2025 Gerdes also bought Amy's Cupcake Shoppe in Hopkins.
