Raymond LeBlanc opened Quality Bake Shop at 91 Pearl Street in Essex Junction in 1955, and it remains the shopping center's only surviving original tenant. Michelle Simms, who started working there at age 9, owned it for about 21 years; the business is now run by Doug Simms with Doug Simms Jr. as bakery manager. Doughnuts are still fried six mornings a week from about 3 a.m. using LeBlanc's recipes.
