Dough opened in Bed-Stuy, Brooklyn in 2010, built by Steve Klein and pastry chef Fany Gerson around oversized, brioche-style yeast doughnuts. Gerson left in 2020 and the original Bed-Stuy shop closed, but Klein rebuilt the brand from its Flatiron store and it now has six shops across Manhattan, Brooklyn and Queens.
