Food scientist Jessica Dunkel launched Slow Rise around 2022 as a pop-up at the Lawrence Farmers Market, then the Overland Park Farmers Market, building a cult following. She and husband Jeff opened the first brick-and-mortar shop at St. Andrews Plaza on W. 135th St. in Overland Park in January 2026.
