Marv 'Donut Man' Miller and his wife Barb bought a struggling Regent Street shop called Donuts Unlimited on March 1, 1996 and reopened it as Greenbush Bakery. In 1998 it became a certified kosher dairy kitchen, which it describes as the only one between Milwaukee, Minneapolis and Chicago. A second location later opened on Madison's east side at 5225 High Crossing Blvd.; the bakery is now run by the Millers' grandson Taylor Carlson with family members.

Founded by Marv and Barb Miller (Madison Magazine 2024, Wisconsin Alumni Association); the bakery's About page says grandson Taylor Carlson now owns and operates it with Lisa and Jeff Carlson.
