Husband-and-wife bakers Aaron Mooney and Caitlin Rockey ran a vegan bakery called Shanty Town in Walla Walla, Washington, before moving to Madison in 2019 and relaunching as Level 5 Donuts, a pop-up that sold at festivals, cafes and co-ops and later worked out of Main Street Industries. In spring 2025 they opened their first brick-and-mortar shop at 2086 Atwood Ave.
